Frying vegetables like tomato, aubergine and pepper in mediterranean extra-virgin olive oil boosts their levels of antioxidant-rich phenols, known for their anti-aging properties. Researchers at the University of Granada say that the frying process aids absorption of the phenols from the olive oil. Keep the temperature on the low side - if olive oil starts to smoke it is a sign that the high heat is turning it toxic.
Buddha clearly taught vegetarianism as part of his instruction to be mindful and compassionate. In a Mahayana sutra Buddha says that ‘the eating of meat extinguishes the seed of great compassion’.
